
My husband does a ton a grilling in the summer. While he’s grilling it’s my job to whip up the sides. Here are my quick under 10 minute favorites!!!

I love zucchini & squash in the summer! It’s fresh, and I can grab it on the cheap. I chop up one zucchini and one yellow squash, and sauté them in a large frying pan. I spray the pan with a little Pam Olive Oil. Once the vegetables are in the pan, I sprinkle them with McCormick’s Montreal Steak Seasoning. It packs a punch so you don’t need a ton. Depending on the amount of the veggies I use less than a teaspoon. Done in 10 minutes. This side goes great with pretty much everything. I especially like it with grilled pork chops!

Wilted Baby Spinach with Garlic is another quick favorite around here. I got the original recipe from the Skinnytaste website. I stopped following the exact recipe and just mix it up. I drizzle a large skillet with olive oil. After it’s heated, I add about a teaspoon of minced garlic (you know, the one that comes in a jar). Once the garlic is browned , in goes a bag of baby spinach. I sprinkle that with sea salt and fresh cracked pepper. Once the spinach is wilted, I serve immediately. I recommend cooking on low to medium heat once the spinach goes in pan. I think it comes out less bitter that way. We love this dish with salmon and chicken!

Our absolute summer staple is a caprese salad. We have this at least once a week! I quarter a container of Campari tomatoes, dump in a container of mozzarella pearls, and drizzle over it some olive oil and balsamic vinegar. I finish it with a bunch of basil paste and mixed-up salt. I mix it altogether and serve immediately. It goes with everything!!!!!! It’s great for lunch too with a piece of crusty bread or naan to soak up the sauce!
