🍓🍓Need a super quick dessert for today? Fake strawberry shortcake to the recuse!! It’s yellow cake, with marinated strawberries, & one container of regular Cool Whip. For this one I used a Duncan Hines yellow cake, or you can make one from scratch. I used 16oz of fresh strawberries sliced & then marinated in 1 teaspoon of sugar and 2-3 teaspoons of triple sec (I let mine soak over night but 45 minutes to an hour will work). You can use orange juice if you don’t want any alcohol.
Defrost the Cool Whip while the cakes cook and cool. Put down your first layer of cake and drizzle half of the marinade over the base cake. Top with half of the Cool Whip and half of the strawberries. Top with the second cake layer & drizzle that with the remaining marinade. Finish off with the remaining Cool Whip and strawberries. Keep in the refrigerator until you’re ready to serve. 🍰🍰
Variations – use butter cake or angel food instead. You can use lite or fat free Cool Whip to lower calories. If you don’t like Triple Sec, tequila works too. Orange juice is best for an alcohol free version. Play around with it and make it your own!
